What is a Buddha Bowl? A vegetarian dish whose main components include: a whole grain, a protein, veggies, dressing, and a topping. It’s a fun play on a traditional salad, allowing you to create a balanced meal catered directly to your taste (or what you have on hand).
½ cup Guacamole, homemade or Linvilla-made
1 can of Black beans
Quinoa*
Grape Tomatoes
Bell Peppers, sliced
Radishes shaved thin
Scallion, sliced thin
Shredded lettuce, any variety
Lime wedge
Chipotle sauce **
Start with a deep, flat-bottom bowl or bento box.
Place guacamole in the middle then arrange the next 7 ingredients in a circular pattern. Squeeze lime wedge all over and drizzle with chipotle sauce if you want an added kick.
*I used Kitchen&Love Spanish-style quinoa. Pre-seasoned and microwaves in 90 seconds, it’s a fast and easy way to add whole grains.
**I used Terrapin Ridge Spicy Chipotle squeeze as my drizzle. Not a fan of spice? Skip it or choose something milder.
